This juicy tabouleh recipe is what you didn’t know you needed in your life. It’s just the right amount of lemon and is packed with healthy ingredients. It pairs well with so many entrees and is even a satisfying meal all by itself.

This is a refreshing, guilt-free meal and I love that I can just pour it into a bowl and serve it as a healthy last minute lunch or dinner

If you’ve never used bulgur, don’t feel intimidated. It’s a grain that you can find at your local grocery store. All you have to do is soak it in boiling water until it is soft to the bite, about 30 minutes

The boiling water should always be a bit above the bulgur so it always has enough water to soak up

After 30 minutes of soaking in boiling water, take two or three pieces of bulgur and taste. If it is soft to the bite, drain water

Transfer the bulgur to a larger bowl

Add olive oil to bulgur

And lemon juice, so the bulgur soaks up all that flavor

Add diced tomatoes, green onion, and parsley

Add salt

Mix very well and transfer to a serving dish or food container

Ingredients:
1 cup bulgur
4 cups boiling water
2 bunch curly parsley, diced
2 bunch green onion, diced
5 medium tomatoes, diced
1/2 cup juice of lemon
1/2 cup + 2 tbsp olive oil
1 1/2 tsp salt
Put bulgur in a large bowl. Add four cups boiling water and let sit for 30 minutes
While the bulgur is absorbing the water, finely dice the parsley, green onions, and tomatoes
After 30 minutes, taste bulgur to see if it is soft to the bite. If it is, drain water and add olive oil and lemon juice to bulgur
Add tomatoes, green onion, parsley and salt to the bulgur mix
Mix very well
Serve with lettuce or homemade pita bread
