This light and fluffy Mexican rice recipe is so simple and delicious. It goes perfectly with so many dishes, including the Taco Bell Mexican Pizzas we make at home and best of all, it’s healthy and easy to make. Read on to make this yummy recipe yourself.

The quality ingredients in this dish create the perfect restaurant style rice

Add refined coconut to oil to pan on medium heat. Once hot, add dry rice (not rinsed). Note: Be sure to use refined coconut oil, which provides a neutral scent and flavor as opposed to unrefined which has a strong coconut flavor and smell

Stir for 5 minutes or until the rice is golden brown and smells toasty

In a blender, add tomato paste, garlic, onion, and water. Blend well and slowly add to toasted rice. Note: Use only a small garlic clove and 1/8 of a small onion, the goal is a subtle hint of these two ingredients. Adding more will overpower the flavor of the dish

Stir on medium heat for 2 minutes

Swish 3 cups water around in blender to get remaining tomato mixture

Pour into pan and mix well

Add chicken base and salt

Once boiling, cover and reduce heat to lowest setting for 20 minutes

After 20 minutes, lift lid to remove steam. Turn off heat and let sit, covered, for 10 additional minutes

When the 10 minutes are up, fluff rice with a fork

Enjoy alongside any main dish or on its own!

Ingredients:
2 cups long grain white rice, not rinsed
1/8 small white or yellow onion
1 small clove garlic
2 loaded tbsp tomato paste
3 1/2 cups water, divided
3 tsp bouillon chicken base
1 tsp salt
5 tbsp refined coconut oil
Blend together onion, garlic, tomato paste, and 1/2 cup water, set aside
Heat coconut oil in a large pan on medium-high heat. Once hot, add rice
Stir for 5 minutes or until rice is golden and smells toasty
Slowly add tomato paste mixture to rice and stir for 2 minutes
Stir in remaining 3 cups water, chicken base, and salt to rice. Bring to a boil
Once boiling, cover and turn heat to lowest setting for 20 minutes
When 20 minutes are up, turn off heat and raise lid to release steam
Recover pan and let sit for an additional 10 minutes
Fluff with a fork and enjoy!
