I made this Super Mario castle cake for my son’s fifth birthday. This was my first go at making a cake with fondant icing and although I had several panic attacks during its creation, I learned so much and would definitely do it again. This project will require a few days of prep to make all the fondant cake toppers, so definitely carve out some time for it. I’ve got lots of tips and tricks to share, let’s get started with this super cool Super Mario castle cake.
Watch this video to see how I made all the cake toppers. I started making them about four days ahead of the party. I stored them in an airtight container at room temperature. I ordered brown, yellow, red, blue, green, black, and white fondant. The brand for most of the colors I ordered was Satin Ice. The fondant was very fresh and easy to use

I used this Wilton Castle Cake Set for the towers and main roof of this cake as well as my daughter’s princess castle cake

I made two 13 inch cakes and two 8 inch cakes the day before the party. When cooled, I wrapped them in plastic wrap to keep them moist and left them on the counter overnight (the extra cake layers were for another cake I was making for the party)

I used milk chocolate frosting in between the two 13 inch cakes as well as on the top and sides of the cake

I used this cake smoother to get an even and smooth layer of chocolate frosting (an important step before placing fondant on top)

I rolled out a large ball of blue fondant for the two 13 inch cakes. (Tip: to ensure the whole cake is covered in fondant, make the diameter of the fondant a few inches longer than the top and sides of your cake. Also, don’t use too much corn starch, this made my fondant dry causing cracks to form. When rolling out your fondant, use just enough corn starch to keep it from sticking to surfaces

I repaired the dry cracks by rubbing them gently with water until they disappeared

I used very little corn starch when I was rolling out the white fondant. It turned out perfect. This part of the cake was so much simpler to do because the fondant was much more moist

I used this Super Mario cake topper set for the character figurines. I adhered all the cake toppers I made to the fondant icing by brushing each piece with a tiny bit of water. I hot glued the red tower roofs to the towers and pushed the castle towers and main roof into the cake to keep them in place

To make the white fondant layer look neatly placed on the blue layer, I rolled out a very thin rope of white fondant and pushed it all around the bottom edge of the white fondant cake. For a finishing touch, I lightly brushed all the blue fondant icing with very little water to give a deeper blue color

Who says you can’t have your cake and eat it too! We sure did. Enjoy!
