This authentic Armenian stuffed bell pepper recipe is packed with flavor and healthy ingredients. Once these start cooking, your whole house will smell amazing. I love eating these stuffed bell peppers with raw onion and homemade pita bread.

Add 1/3 cup water to crock pot. Wash, stem, and seed bell peppers and place in crock pot

Put rice and ground beef in a large bowl

Add diced tomatoes to bowl

Add tomato paste

Add lemon juice and olive oil

Add crushed garlic, salt, and black pepper

Add dried mint, this ingredient is a must in this recipe. It adds that authentic Armenian flavor that brings the whole dish together

Add sumac, this is a tangy spice that gives the stuffing a little bit of magic

Mix beef and rice mixture by hand until all ingredients are well incorporated

Your stuffing is ready for the bell peppers!

Use all the stuffing to fill the bell peppers. If needed, push the stuffing down to add more (don’t worry about overstuffing the peppers, the crock pot is going to cook the rice perfectly)

Sprinkle dried mint on top as well as in between the peppers to get some mint in the water at the bottom of the pot

Cook for 6 hours on high, and prepare to smell the amazing aroma that will fill your house

Armenian Stuffed Bell Peppers
Yields: 7 Stuffed bell peppers
Prep Time: 20 minutes
Total Time: 6 hrs 20 min
Ingredients:
7 bell peppers (any color variety)
1 lb ground beef
3/4 cup white rice
2 medium sized tomatoes, diced
7 oz jar tomato paste
1/2 cup lemon juice (divided)
4 garlic cloves, crushed
2 tbsp olive oil
1/3 cup water
1 tsp dried mint
1 tsp sumac
1 tsp pepper
1 tsp salt
Wash, stem, and seed bell peppers
Pour the water in crock pot and place bell peppers in crock pot
Put meat in bowl add rice
Dice tomatoes, add to meat rice mixture
Add tomato paste, crushed garlic, olive oil, and 1/3 c lemon juice to meat rice mixture and remaining lemon juice in the crock pot with water
Add salt, pepper, mint, and sumac to mixture and mix everything together by hand
Stuff bell peppers with meat rice mixture
Sprinkle mint on top of each pepper and in the water on the bottom of the crock pot
Cook on high for six hours
